Pumpkin Ginger Cupcakes


So I was mulling around the house yesterday and decided to bake something, I whipped up these delicious cupcakes. I used a basic cream cheese frosting with a sprinkle of cinnamon. I think it would be fun to use almond extract in the frosting instead of vanilla as well. I love to experiment. Cooking is all about having fun! Try these and put your own twist on them.

Pumpkin Ginger Cupcakes

2 cups all-purpose flour
1 (3.4 ounce) package instant butterscotch pudding mix
2 teaspoons baking soda
1/4 teaspoon salt
1 tablespoon ground cinnamon
1 1/2 teaspoon ground ginger
1/2 teaspoon ground allspice
1/4 teaspoon ground cloves
1 cup butter, room temperature
1 cup white sugar
1 cup packed brown sugar
4 eggs
1 teaspoon vanilla extract
1 (15 ounce) can pumpkin puree

Preheat an oven to 350 degrees F (175 degrees C). Grease 24 muffin cups, or line with paper muffin liners. Whisk together the flour, pudding mix, baking soda, salt, cinnamon, ground ginger, allspice, and cloves, in a bowl; set aside.
Beat the butter, white sugar, and brown sugar with an electric mixer in a large bowl until light and fluffy. The mixture should be noticeably lighter in color. Add the room-temperature eggs one at a time, allowing each egg to blend into the butter mixture before adding the next. Beat in the vanilla and pumpkin puree with the last egg. Stir in the flour mixture, mixing until just incorporated. Pour the batter into the prepared muffin cups.
Bake in the preheated oven until golden and the tops spring back when lightly pressed, about 20 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.


Cream Cheese Frosting

1 (8 ounce) packages cream cheese, softened
1/2 cup butter, softened
2-3 cups sifted confectioners' sugar (depending on how thick you want it)
1 teaspoon vanilla extract

In a medium bowl, cream together the cream cheese and butter until creamy. Mix in the vanilla, then gradually stir in the confectioners' sugar. Store in the refrigerator after use.

Craft Warehouse DT assignment #2

The first part of our DT assignment #2 at Craft Warehouse was to design a canvas. You could pretty much do whatever you wanted to it so long as you used the Sassafras Line. I chose to use Indie Girl. This line of paper and embellishments is so petite and feminine. I couldn't help but use it on a photo of my sister when she was little. I opted to try and make a clock out of my canvas. I love how it turned out. I plan on making many many more of these in the future. I think they would make the perfect christmas gift!





The second part of our DT assignment was to create a 12x12 layout using the Sassafras AppleJack line. This line of paper is so fun to use! Lots of awesome papers, border stickers, cardstock stickers! Perfect for a boy layout!





The third part of our DT assignment was to make a 12x12 layout using Prima Flowers and NO patterned paper! Ugh this is so hard for me. lol I doodled a tree looking background to make my own paper. I also made the fence and put some Tim Holtz rock candy on it to give it a shine.





The fourth part of our DT assignment this month was to make a card using Prima Flowers and NO patterned paper. Wow was that a challenge for me! I tried and made three!

In Memory... Jack Young 12/7/1941-6/14/2007

In memory of my dad who passed away 3 years ago. I miss him so very much. I have to admit that time is not healing this wound very well. So much I want to share with him about my life changes. I know he is watching and knows what goes on, but it is still hard. I love you so very much dad! May you rest in peace.

Craft Warehouse Design Team 2010

Wow I can't believe I really made it!!! This was my second year sending in an entry. I am so glad I decided to give it another try this year. I was so shocked when I got the call asking if I would accept a position on the team. All I could shout was yes, yes, yes!!! I am sure I sounded like a blubbering idiot lol. I am very thrilled and excited to get to work with some amazing talented ladies! A big Thank You to everyone who supported me and coaxing me to try out again.

So excited!

I am so very excited to have been chosen to be a DT member for A Day in the Life of Renee The rules for submissions was that the layout had to be pink and brown. These were my submissions.

Hello from Kansas!!

Just wanted to shout hello to all my friends, while I am vacationing in Kansas with my amazing boyfriend. It has been an awesome 5 days and looking forward to the next few before I have to go home. I have actually been looking at houses here to possibly buy instead of rent. That's right I have pretty much made up my mind that I will be moving to Kansas in the future. There is a better chance of being able to open my scrap store there then in Oregon. It isnt anything that will happen right away, but it does keep me focaused and excited for the future. Also just being able to be with the love of my life daily will mean the world to me. My daughter is starting to like the idea of moving as well and that makes me extremely happy. So stay tuned for more on this adventure :) Have a great weekend.
